The Label Speaks

There is a joyous and festive atmosphere at one of our Taproom pubs during the holiday season. The curmudgeonly scrooge in the foreground, however, is having none of it. He just wants to belch out to everyone a surly Bakayaro! He truly is in a sour, insolent and obstinate mood. The kanji characters in the label, henkutsu (偏屈), further express this.

Water Soft, Cleanly Flavorful, Local
Malted Grain Floor-malted Pilsen, Wheat, Munich, Caramel
Un-malted Grain Roast Wheat
Sugar Japanese Kokuto (Dark Cane Sugar)
Hops Whole Flower Cones – Various Varieties
Yeast House Scottish Ale Strain

Bryan's Brewing Notes

Bakayaro means idiot or moron in Japanese. The concept and the naming of this insolent brew were the brainchild of home brewer and former director of brewery operations, Chris Poel. The beer is pungently hoppy and wickedly strong. We bump up the alcohol without rendering the body too heavy by using substantial amounts of Japanese dark cane sugar. We hop heavily during the kettle boil with several varieties of boldly flavorful American and international hops and we recombine them in a triple dosing of dry hops after primary fermentation is complete. We krausen at packaging in order to add further flavor complexity and to produce a piquant but soft all-natural carbonation.
