’Wet’ hops refer to the hop cone in its most natural zero-processed form. This is a form we love. Cascade & Centennial hops are varieties developed in the U.S. but which now grow in several countries, including Japan. This year we use Cascade & Centennial hops grown in Yamagata prefecture

‘Wet’ hops (often called ‘Fresh’ hops) refer to hops just harvested in the field that are used as-is with no drying or
further processing. As such, they must be used by the brewer immediately (ideally within hours of harvest) or else
the high-moisture content wet hops will begin to rot. Wet hops represent the hop cone in its most natural form.
This year we have used Cascade & Centennial hops grown in Yamagata prefecture. The hops were delivered to the
brewery for immediate use several hours after their harvest by our brewery team. The hop character is wonderfully
fresh and piquantly fruity. Craft beer has entered the age of increased usage of locally grown and harvested
ingredients. We are happy to be brewery players in this next frontier of the craft beer journey.
