The Bashamichi Taproom is our fourth pub and our first in Yokohama (Kanagawa prefecture). Opened in January 2011, the concept is simple: authentic American-style BBQ matched with Baird Beer.
What is ‘authentic American-style BBQ?’ It is meat that is smoked and cooked over a wood-fire at low temperature for several hours (“Low & Slow”). This smoking/slow-cooking process is magical, rendering meat juicy, tender and richly flavorful. We like to burn local Japanese wood, particularly sakura (cherry), in our pit for this slow smoking which we believe lends a subtle and unique ‘Japanese’ character to Bashamichi Taproom BBQ.
We incorporate a variety of meats in our barbecue, including grass-feed Australian beef, American pork as well as Japanese chicken and pork. Except for the ribs, which are finished in our sweet savory red sauce, all our meats are served “dry” (i.e. with just a rub of spices) because we feel the flavor of the meat stands on its own. We do make from scratch three terrific BBQ sauces (sweet savory red, tangy mustard, and spicy vinegar) that reflect the traditions of three major U.S. BBQ regions: Kansas City, South Carolina, and North Carolina. .
We take equal pride in the preparation of our traditional BBQ side dishes, hand-made pizzas, fresh salads and home-made desserts. American-style BBQ and Baird Beer are a match made in heaven!
The Bashamichi Taproom consists of three floors (1st floor kitchen and bar, main seating on the 2F, and a roof-top beer garden and Japanese-style garden house).
A large-screen T.V., dart boards, and regular live music highlight the entertainment on our second floor. We are able to accommodate large groups and private parties can be arranged for our roof-top space. As with all Taprooms, expert wood craftsmanship contributes an ambiance that is warm, intimate and unpretentious.
Our location is outstanding: right off the historic Bashamichi in downtown Yokohama and within a 5-7 minute walk of three train stations (Sakuragicho, Kannai, and Bashamichi).
