Want BBQ? Come early
I know I have beaten this horse before but I will say it again. Â If you want to eat BBQ at the BT, come early (and often :) to be sure of the best selection of BBQ. Â Why do I keep saying this? Because no matter how much planning I do, there are/will be days when enough is never enough. Â As an example, take brisket. It takes 10+ hours to cook brisket. So I have to estimate how much brisket to cook the day before so it will be done on time. Â That means if I get an unexpected crowd of hungry BBQ eaters at 6PM, then you come along at 8PM, 2 hours later, there may not be any brisket left for you.
And it is not like I can just throw some more brisket into the oven and expect it to be done in an hour, see 10+ hours above. Â And I only serve fresh cooked meat, I don’t/won’t reheat brisket that was cooked earlier because I will serve only the best brisket I can make and that means fresh cooked. Â I think you will find it very well worth it.
