July Summer BBQ – Jamaican Jerk Chicken

As I mentioned in an earlier post, all this summer, Bashamichi Taproom will be offering different smoked/BBQ meats each month. ツThis month is pulled pork month so if you have been waiting for pulled pork, come on down to the BT on Friday-Sunday this month and get the best pulled pork sandwich in Japan.

This is a preview of next month’s summer BBQ special, smoked Jamaican jerk chicken. ツIn our version of the Jamaican jerk, boneless chicken thigh is marinated in my jerk seasoning over night (or longer) and then rather than being grilled, of course we cook it in our BRM (big red machine) for a unique smokeツflavorツonly the BRM can bring. ツI finish it off by crisping the chicken in a really hot oven and then serve it with a West Indian style black bean and rice and a sweet mango-cilantro salsa. ツThe jerk marinade has several habanero chiles in it and while not oppressively sweat inducing hot, there isツa kickツto it, it wouldn’t be Jamaican w/o the heat. Andツthatツis where the cool sweet mango salsa does it job, to soothe and cool the mouth.
