After long reflection as to how best to regularly and systematically deliver to you, the beer enthusiast, the most interesting and diverse range of beers possible, we have reorganized our seasonal brewing efforts into the following five series:

The first seasonal beer to be released under this new format belongs to the Big Beer Series — Dark Sky Imperial Stout. Dark Sky goes on tap today (Wednesday, March 10) at the Fishmarket Taproom in Numazu.
Imperial Stout is the biggest of the black beers and to drink Baird Dark Sky is to experience a foreboding libation. The aroma is gorgeously complex (dry hopping with American Centenniel & Amarillo hops) and the flavor is a stunning smorgasbord (chocolate, toffee, herbs, coffee, licorice, etc.). The mouthfeel is soft and enveloping. The finish is piquantly acrid and warming (alcohol approximately 7.6%).
Dark Sky will be poured at The Tokyo Real Ale Festival later this month and, as a result, availability at the Taproom is extremely limited. Please come in soon for a pint while supplies last. Also, a very limited number of bottles of Dark Sky will available for take-out sale from the Taproom beginning today (Wednesday, March 10). The bottle-conditioned version is lovely and for all of you interested in laying down beer for long periods of maturation, Dark Sky Imperial Stout would be ideal.
